It’s that time of year in which plump green leaves turn to a golden crisp, the warm days of summer turn cool and sweet pumpkin spice lattes take over Starbucks (and Instagram). The changing weather signals the coming holiday season. Images of meals with family and friends dance in our minds as we dream of all the seasonal goodies we now have an excuse to indulge in. But, what is an alternative to the standard turkey dinner you ask? Here is a pasta dish that has the flavors of Fall, sans the big bird at the center of the meal.

Butternut Squash Alfredo

INGREDIENTS:

½ can of Trader Joe’s canned butternut squash

½ tsp (or to taste) fresh ground pepper

½ tsp (or to taste) garlic salt

dash of nutmeg

1/3 cup nutritional yeast

1 cup raw cashews, cover with filtered water and soak 2 hours, then rinse and drain

Additional filtered water

½ pound linguine

DIRECTIONS: Add drained cashews to blender along with butternut squash, spices and nutritional yeast. Blend on high until smooth and creamy, adding 1 TBSP of water at a time until desired consistency is reached. Cook pasta until al dente and drain, reserving ½ cup pasta water. Return pasta to pot and pour sauce over. Toss to combine, thin with pasta water if necessary and adjust seasonings to taste. Serve immediately with fresh cracked pepper and additional nutritional yeast if desired.
